@aardvark - I really meant "speck", a kind of smoked, salted and dry cured ham from south Tirol and North Italy. See wikipedia.

Thanks for pointing out my error MrO and for making clear the kind of speck you were referring to. I thought the Dutch word for bacon was spek but evidently that is not the speck you use in your historic recipe.
